It will hold a steady heat while cooking. The only full blast is when you turn the burner knob to "Boost". And know that if you remove the pan from the burner for more than (about) 10 seconds, the burner automatically shuts off - need to start again (turn burner off and then back on). Also, I found that it does take some time to learn how the number (on the burner knob) translates to desired heat level. Hope this helps!
