“Do you have to use convection option all the time, or can you cook without convection?”

Yes, you can choose either option. Convection is only selectable on the bottom oven, not the top.

The use of the convection is just that an option. NO you do not have to use it all the time. However, you will be surprised at how fast your baked foods are prepared. I use it strictly for convenience and if I am rushed for time. LOVING THIS STOVE/OVEN!!!
