“Can this be paired with more than one device? Meaning can I have it paired with a Windows PC and a Mac at the same time and switch by pressing a button?”

I believe I device should pair with 'blue tooth' and the other device using the USB transmitter this would work. I have 2 MS Windows computers set up this way. The Mac, in the mix, may not play nice. Keys near the number pad switch the devices.

Hey! Yes, you can connect to more than one device at the same time. The Easy-Switch button on the keyboard lets you to switch between two computers instantly with a single press.
