The NR1200 is a stereo receiver, whereas the NR1510 is a surround sound receiver. If you are only planning on using two speakers (and maybe adding a sub-woofer at some point) for the sound delivery in your room, the NR1200 is the model to consider. The NR1510 is the one to choose if you will be using surround speakers with your front left, right and center speakers at any point. This is often the obvious choice for a movie enthusiast. Either model will work great for movies and music, it all depends on how many speakers will be used in that room.
