To change after it starts, press pause - then power button and choose the desired setting, but all liquid in tank will flush out and soap or cleaners will still be mixed with the clothes. You can press rapid wash or continue with new settings but use less detergent.

There isn't a reason to stop the cycle unless you wish to soak something or you are adding one item to the load. You can then touch the Pause button to open the lid so you can put clothes in.
