“How to remove current Outlook & retain my emails to place on new Outlook?”

In the past I had used Outlook 2011 but skipped the 2016 update (and Outlook 2011 no longer worked on my updated Mac OS, but I kept the program and files in place). Just loaded Outlook 2019 and imported my old emails. Initially had to repair the email files to match the new program but that went well, then imported without any problem. All of those old emails are now in the new program. All of the software needed to do this was present in the new program, although it took a little trial and error to get it right. I'm sure instructions are present somewhere.
