Yes, you can have the audio off, and the noise cancelling on...works great for sleeping on a plane. It makes a big difference.

The noise cancellation circuit is activated by a switch. It will only work with Bluetooth technology, and is automatically disabled if you choose to listen to audio via the 3.5mm cable.
That said, I found the over-the-ear design very good at blocking loud ambient noise. The loud ambient noise isn’t completely eliminated, but the drop is significant. Indeed, I was able to monitor my video camera’s audio in a very loud DJ environment.

No, at least I don't think so. I think the ANC feature when on effects the sound of what you're listening to through the headphones so that it helps block out external noise.
