“I currently have a Xfinity Fiber Gateway (Model Numbers are: Arris X5001). So is this compatible with WiFi 6 or do I need another modem/gateway that's suitable to run wifi 6? And do the modems/gateways affect the performance of the orbi? Thanks!”

Wifi 6 is only used to interact between the router and wifi 6 capable attaching devices such as the latest smartphones. It has nothing to do with how the router interacts with the modem and upstream Internet connection and that will continue to be limiting factor for performance. The carrier access rate you pay for will typically be the limiting factor for connecting to the Internet. Ie if you get new Wifi 6 smartphones and a nice Wifi 6 router, you may or may not see any overall performance difference if your carrier access rate is low compared with your usage.
