“I know I can brew ristretto, espresso, and lungo sized espresso. Do i need to use different capsules to make each one? Or does the machine simply adjust the espresso brew itself? Thank you!”

Unfortunately the machine doesn't really adjust to the size. Many of the pods have a description whether they make a lungo, espresso or whatever. Which probably means the lungo ones are not going to get weak when brewed at that setting.
