There are two pressure settings. High and Low. We were concerned about the same thing as our old pressure cooker came with 4 pressure settings and went higher. But everything we have cooked in the pressure cooker has turned out perfect. So far not a single complaint. Our number one use is a beef tomato stew but that isn't the only thing we have done. So far it's far better than our old aluminum pressure cooker and I feel much safer with it.

Sorry, there was a problem. Please try again later.I just bought this item not too long ago. I have not seen in the owners manual anything anout setting pressure. The pressure is automatic but you can set the pressure cook time. You can opt for automatic vent or manual release. I have never had a pressure cooker before. This appliance is a great and worthwhile investment. I never knew food could cook so quickly. There is a newer version now available as the 15 in 1. I hope this helps! Good luck.
