“I currently have an I5-9600k OC'd to 4.7GHz and 32GB of 2600~ ram. Right now I have a GTx 1060 3GB will a 3070 be overkill on 1080p. But wouldn't this card be more future-proof than a 3060? Also, I have multiple monitors, often edit, and game.”

The 3070 would make a great pairing with the i5-9600k as you will get 97-100% of the performance of the card without bottlenecks in 1080p . I would only recommend getting the 3070 if your monitor has a refresh rate of 144hz or higher, if not it would be best to stick to the 3060 for an upgrade.
