Will this work with MacBook Pro running Windows 10? null

You need a graphics card that is a gtx1060 or better to run the oculus rift s. So unless you have an eGPU it’s a no go.

There is a YouTube video explaining how to do this but you have to install extra drivers along with Boot Camp... looked complicated. I bought a MSI laptop from Best Buy with the RTX 2060 and it works fantastic with the Rift-S, probably the route of least resistance
