I was able to pick it up the day after, but I only saw two copies.

It's going to vary from store to store, but most, if not all, stores will stock it, since it's a first party Nintendo title. As to how many copies each store will have, that'll depend on the size and popularity of the location. If you're not confidant, you can always order the item online, and select in store pickup as an option.
