I personally like to keep playing and grow my collection of Pokemon so haven't felt the need but if you'd like to... Go to System Settings. Go to the Data Management tab. Select Delete Save Data. Select Pokemon Sword / Pokemon Shield. Delete the Save Data for the relevant user. Select Delete Save Data when prompted.

All that's really to do is to have a nintendo online pass to trade characters until you've completed the dex. Or buy the extended pass to get the 20 additional characters. Once you have it all there's really nothing to do. Alola was fun because you could still find stuff to do after the game.
