“I broke my right hand and Im only able to drive with my left hand. So I can't reach over to answer calls, enter GPS or my Amazon music. Will this allow me to use voice recognition through my Bluetooth car radio? Also can I do speech to text?”

You can, just have to push one button on the headset.

This headset has a multi-function button that activates the voice assistant of your phone (Siri, Google). However, you will need to press that button for at least 2 seconds to activate it. Regarding speech to text, the Voyager 5200 headset doesn't count with that feature, this will be a feature from the mobile device itself. Not sure what you mean by Bluetooth car capabilities, but whichever you use last will be your default for Bluetooth.
