We recommended avoiding constant high heat because we find that over time exposure to high heat will deteriorate the surface, causing food to stick to the nonstick coating. Farberware® cookware has excellent heat conductivity where you don't need to high heat, and most cooking needs are achieved within the use of low to medium heat. If high heat is required, we recommend once the top temperature is reached, to lower the heat to medium to preserve the life of the nonstick coating and avoid overheating.
