You can mount it to stucco. I would worry that your wifi signal may be weakened by the wire mesh the stucco is applied to. I would strongly suggest testing your wifi near your existing doorbell or where you want to mount your Ring doorbell with your phone. Do a few speed tests and ensure you can get decent signal and internet speed there. Mounting may require additional hardware for stucco that you may need to buy at a home center. The kit includes screws and plastic anchors but you may need longer screws or different kinds of screws to drill cleanly through the stucco without damaging it.
