“The molding where my current doorbell is, is skinnier than the ring. Would I still be able to use it even though all sodes wont be flush up against the molding?”

Absolutely. It will work fine. You just need to be able to hook the 2 doorbell wires up, (RingPro requires 16vac 30va), verify voltage, and be able to put a couple of screws in to hold it to the trim. One up top, and one on bottom.
