I use a dongle with:
2 type C connecters (one for power)
2 usb A 
1 HDMI
I imagine a dock will work too. You can download apps and use a Bluetooth controller. Sorry for not showing a controller with it. Hope the photos help.

The Asus Rog Ally is essentially a portable PC, unlike the Steam Deck you dont need to install windows because it already have windows installed. Whatever you can do with a PC straight out of the gate you can do with the Rog Ally. The dock comes with Asus Rog Ally itself and it just there to make it stand so it doesnt lay flat.

I would recommend getting a dock because all the connections are designed to work with the unit, I have a dock and it works really well.
however, getting a USB-C to HDMI may or may not work
