Yes and yes. You can turn off the ice maker by using the controls on the inside of the refrigerator. Or, even better, download the "SmartThings" app and you can do this from your phone. What's nice about that is you can turn it back on from anywhere a day or two before you return and come home to a full ice bin. However, being that the ice maker will stop making ice once it's full, I'm not sure you'd need to turn it off.
