I do not believe Xbox or PlayStation support 3440x1440p resolutions as of right now. So I don't think it will do 1440p at 120hz but it will for sure do 1080p at 120hz.

As far as I'm aware xbox does not support ultrawide displays so you will get black bars on both sides. HDMI 2.0 also does not support the required bandwidth for 1440p 120hz 10-bit but I do not see any reason it would not work in 1440p 120hz 8-bit but you should look for another display if that is what you are looking for.
