120Hz means the TV can refresh the image twice as fast as a 60Hz set can (technically 120 times per second). This helps when watching fast sideways-moving images because there will be less tearing or blurring. I only have a 60Hz TV though, and I honestly could not tell the difference when comparing the two at the store.
