Just bought one, cooked a stuffed 20lb. turkey today in 3-1/2 hours, much more quickly and evenly than a conventional oven. I was told by the salesperson that the true convection oven has an additional heating element in the oven and a fan circulates the hot air from it assisting in the cooking of the item being baked. A regular convection oven only has the fan.
