• Yes it does. There is a button for Bread Proofing. Here is a photo from the Owners Manual on its operation.

• Yes and it works great! I've used it with both bread dough and pizza dough so far. Just be careful not to over proof - I'm so used to things taking forever to rise in our cold house that I left pizza dough in the proofer too long and it rose and collapsed some. We still ate it though!
