“If I don't connect the TV to the internet, will it still work? I don't plan to use built in apps and I've seen on the reviews it has built in ads, which I don't want loading on the TV.”

Of course you can still use it. Connecting it to the internet provides features and enables the smart products. If you just want to use it as a tv then you can; but why buy it why not buy a non smart tv
