I'm so glad you asked. The temperature adjustment is used for calibrating the oven. This is typically only used during initial installation, but can be used any time you notice the oven not cooking right. For example, if you feel that the oven is cooking too slow, you could adjust the temperature up by 10 degrees. Then, if you were to set the temperature to 400 degrees, the oven would internally make the adjustment to go 10 degrees higher, and would actually reach 410 degrees. This can also be used if the internal temperature is not matching the set temperature. ^Jecca
