“Are the pedestals adjustable in length or rotate-able? I purchased this TV and the pedestals are too big for the size of my console. Is there a separate stand I can buy (maybe a center stand) that will work with this TV? what are my options?”

90% of all TV’s are hung. That's where you get the adjustability. The pedestals are fixed with no adjustments.
