“I am getting ready to use my whole oven for a large ham for easter. Do I have to use both oven adjustments to use the one big oven? I mean do I use both of the adjustments for the top and bottom ovens when I use the whole big oven?”

No when you remove the divider it has a switch that only allows the bottom control to be used

No. Once you take out the divider, the oven is set to work as one and only have to use one button. Does not matter which one. They both work the whole over as a single unit.
