BT (Bluetooth) makes you phone able to access the information on the watch and use your watch to access the data and cellular services of your phone.

LTE (Long Term Evolution) aka 4G/5G allows your watch to act as a cell phone and connect -directly to- your mobile service provider. For example: You can leave your phone at home while hiking or at the gym and still make and answer phone calls as well as use your phone's data plan. 
* A standard "BT only" watch cannot do any of these things without being connected to WIFI or to your phone via BT. *

LTE lets you still get data and calls whenever your phone dies or is left at home. With Bluetooth it only works near the device

Bt is just Bluetooth connection. Lte requires a data plan with your mobile carrier to allow you to connect your watch to make calls and data without your phone nearby. For instance, if you like wearing spandex while you jog but don't want the giant square bulge, you can leave the phone at home and still stream music.

With LTE you have to pay monthly for cellular service but then you still have full functionality even without your cell phone being nearby.
