you would think so, but att told me I couldn't when I activated mine. its built in for the provider

Please try again later.My guess is the AT&T one comes with the e-sim already set up for them (although technically you are suppose to be able to choose profiles among different carriers, blah, blah, etc), however, the At&T site mentions that you can request to have it unlocked, on the page specifically dedicated to this watch. And gives a link that leads to a how to page/# to request this action (I bet there's a fee though).
