“Can I use this with Sprint, but with Bluetooth only? Can I use this AT&T watch to take calls via Bluetooth, but be on the Sprint network? Much like how a car uses Bluetooth. I don't need independent cell service for a smart watch. I'd just like the ability to take calls through my watch via Bluetooth tethering. I don't want the call to use my phone's speakers as the basic S2 can do.”

Yes, you can. In fact, that's exactly what I am doing. I have a Sprint Samsung Galaxy S6 Edge paired up with a white Gear S2 3G from AT&T. I use the watch through the Bluetooth connection. Everything that works on the S2 Sport and S2 Classic also work on the S2 3G.
