“What is the minimum depth of this mount? Description says it extends 5.75" but specs say 2.7" depth. So when not extended, is this mount a total of 2.7" from the wall?”

2.7 inch for the mount, be sure to add the thickness of the TV to get how far out from the wall it sticks out. Also, depending on how you mount it (height, tilt angle, etc.), it could be more than that.
