“Own a 49" Samsung UN49MU7000 smart TV & a Klipsch R-25C center channel speaker. Can I attach my TV to this stand? Also, will the 7" tall speaker fit beneath the TV with at least 1" clearance from the TV's bottom-mounted infrared sensor (8" total)?”

With a 49" screen I think your setup will work just fine. I have a 60" and if I raised it to the top of the mount I would have 8" clearance.
