Yes you can, it has a 3.5mm headphone jack.

The new version comes with headphones that attach perfectly in the headset but they can detach and there is a standard jack where you can plug in your own headphones.

Yes. The PSVR accepts the standard 3.5mm audio jack. Your headphones need to at least be stereo and should cover your entire ears to complete the immersion.
