“I have a kill switch on my 56 beetle to spare the battery from draining while it's parked. Would it still record when I turn the switch off? Some day's I'd like to drive it to work and don't want to end up being stranded when leaving.”

1st I think that your car is 6 volts??? 2nd if it's 12 V you can wire to the battery and set the battery protection to 12.3 V with the app on your phone,
