As an Instructional Designer, I would recommend using two cameras, and not to use a wide angle lens (they tend to make people look really bad when close to the camera). To answer Q3, I have pulled video from the camera (power off, pull SD card, plug to computer, transfer, reinstall card, power on). It is good quality.

You can then insert the MicroSD card to your computer and save the file to be uploaded to a separate video editing program.
