The dimmer switch will control the power going to whatever it is hooked up to. If you dim it to 50%, I believe it should provide 50% of the power to the electrical box that the switch is connected to. You should check with the fans manufacturer to see what happens if less than full power is delivered to it and if the fan would even work then. The ceiling fans that I have seen have a separate fan speed control that controls the speed of the fan by either a pull chain or remote.
