• Although I’m just receiving my ps5 this Friday from bestbuy I would try looking thru the ps5 setting like you would do the ps4 to fix the voice levels on how loud or how quietly you speak

• Yes, you'd have access to the PS5's Voice Chat Balance with this headset. That option would only be accessible via the PS5's menus.
