“I start driving and forget to TURN ON the unit. My outlet stays 'hot' when the engine is off so the unit could keep running. What is the setting where I can plug it in and forget about it? (or do I have to ALWAYS manually turn it on & off?)”

This depends on whether you use an outlet that turns on or off with the ignition switch. We always disconnect the charger when we turn the car off to avoid problems.
