“With a 65" TV that is 33" tall attached to the mount, how tall is the entire assembly? I need to put it inside a cabinet that is just over 62" high. Am I correct in assuming that the TV will make it taller than the 55" cited in specs?”

It will depend on the height you use for the mounting frame and where the mounting holes are located on the back of your television. Yes, the height will be taller than 55.25"; this is the overall height to the tip of the monitor brackets on the highest position.
