Iceman - It will if you keep pressing the button. 
Press 4 times instead of 3 and that 4th time all 3 should illuminate simultaneously.

Hi Iceman, you can find the instructions on how to set the unit to it's coldest setting on page 10 of the Owner's Manual, linked here: https://bit.ly/3wuNNXx
Press the Temp button to toggle among the third LED lights
which indicate the temperature setting. Reading from left to
right, the LED in the first position is the least cold. The LEDs
indicate increasingly colder settings as you continue to the
right until all third LEDs are illuminated.
