“The oven will not hold a consistent temperature. I understand that when you open the door to insert your food it will drop but it does not heat back up to the temperature without adjusting the temp and hitting start again and it looses heat while cooking”

I think patience is key here. Mine will heat back up but it takes a little time. My experience is that the heat loss in opening the oven is minimal if not expected. You might want to use a food thermometer to see if it aligns temperature-wise with the ovens digital thermometer. Good luck!
