Do I have to have internet or WiFi to play Xbox one null

You dont necessarily have to have internet to play but if you want to play live, then yes you would need internet.

You can play the console offline, though an internet connection is required to initially set up the console.

The only time you need internet or wifi is to play online.

You can play the system but it requires the internet to update the system or any games you play.
