“Hi, I have a bunch of different devices - SONOS beam sound bar (HDMI), 2 polk dot in wall speakers (red and black wires) and a Bose companion speaker set with woofer (computer speakers but can connect via a USB). Is it possible to connect all of this?”

No USB output for small speakers. Everything else should be good.
