A: yes they come with several different options for diffrent speakers
Q: will these fit Klipsch Reference Theater Pack rear speakers?
A: They work on the Klipsch 'Energy' series CB-5, and Klipsch tries to maintain congruency throughout their product line in fit and finish, so there should be no problem using them on the Reference boxes.
A: Yes they will. It's what I used, of course if you want to use different speaker wire for longer distance you'll need to buy some adapters. Speaker wire to RCA. See pic

Q: Would these mounts work with definitive technology promonitor 800?
A: It should hold 800 Def pro ok. I use these brackets to mount similar monitor speakers to the ceiling, although I feel the bracket was flimsy and plastic but once I tighten all the bolts, everything seem working alright.
Q: Will this work with Sonos Play1 Speakers
A: Yes. There's a piece that comes out of the arm. You can put a 1/4" screw through it into the threaded hole on the back of the Play 1. Then reattach it to the arm.
