A: It appears to be 120 degrees.

A: This product has one rack.
Q: Does this oven also defrost?
A: This Oven Does have a defrost setting never used it myself. but does have the setting to do it.
Q: Does this oven cook with convection all the time?
A: You have the option to turn the convection feature off if you do not want to use it.
Q: Is Special electrical wiring needed?
A: Not in our case. We use a GFI 20 amp standard outlet. The only issue we have had is not to run the toaster oven AND the microwave at the same time as they are on the same circiut The toaster oven IS powerful so is our microwave so we discovered this minor problem.

A: A convection oven uses a fan (and sometimes an infra-red light source) to move the heat around the food more efficiently than in a "regular" stove. It cooks faster, more evenly, and sears in the juices. And yes, it DOES make a difference - I would never buy an oven that is non-convection again. I found the best way to cook multiple items (if you have large gatherings for holidays or parties) is to have a convection stove / range below with a convection stove / microwave above it. 99% of the time you can cook an entire meal in the smaller stove/microwave unit. The smaller unit will also heat up faster - saving time and energy, it reduces the radiant heat in your house, and is less to clean up than cooking in a big stove.

Q: Can you cook an item in a plastic dish, as you can in a microwave?
A: I would not recommend it. The plastic will melt. It cooks like a real oven or toaster.
