A: There is a plastic thermos lining under the metal lid along with a curved plastic shield inside the metal spout to prevent hot water from splashing out of the spout.

A: There is a bit near the spout inside. It holds a little screen to help filter out any scale that may develop in the kettle bottom. I believe that the see-through column is plastic too. The interior bottom and interior sides are metal, however. I don't think there should be any concerns regarding this small amount of plastic. This product appears to be well-built.
Q: does the kettle have to be emptied after each use?
A: It doesn't need to be emptied unless you specifically want to empty it after each use.
A: It seems that you have the “Keep Warm” on. The CPK-20C default is to have the “Keep Warm” on. If you press the “Boil” button, it will get the water close to boiling for 30 minutes. Check the user manual on page 6.
