The Shun Classic Blonde 5.5 in Santoku Knife sits between a small and a full-size santoku. Its compact size suits medium jobs such as slicing carrots and shallots, mincing herbs and cutting chocolate or butter, and it is a good choice for cooks with smaller hands or anyone who prefers a lighter knife. The blade has a core of VG-MAX, Shun's proprietary stainless steel, clad in 68 layers of stainless Damascus (34 per side) that support the core, add stain resistance and help food release. It has a double-bevel fine edge, hand-sharpened to 16 degrees per side. The D-shaped blonde PakkaWood handle is resin-impregnated hardwood that resists moisture and suits both left- and right-handed cooks, with a full composite tang for light weight and balance and a stainless steel end cap.
