VG-MAX STEEL CORE: Shun's proprietary VG-MAX stainless steel core is clad in 68 layers of stainless Damascus, 34 per side, which support the core and add stain resistance.
16 DEGREE EDGE, HAMMERED FINISH: The double-bevel fine edge is hand-sharpened to 16 degrees per side. The hammered tsuchime finish helps food release from the blade as you cut.
BLONDE PAKKAWOOD HANDLE: Contoured blonde PakkaWood, a resin-impregnated hardwood that resists moisture, with an embossed end cap with brass trim. Handle length 5.0 in.
HANDCRAFTED IN JAPAN: Made in Seki City, Japan. 7 in (178 mm) blade, 12.5 in overall, 7.1 oz. Hand wash and dry right away; not dishwasher safe. Limited lifetime warranty.
