A: The ambiance kit can change the light from warm to cool white tones of light. The other kit that's a lower price can only dim the lights. I have both sets. The light that just dims are my hallway and stair lighting and the other lights that gives me more options in lights are in my living,kitchen and bedrooms.
A: No you don't have to use Apple HomeKit. All you need is something you can run the Hue app on to setup the bridge (Apple or Android device). Once the bridge is setup you can use the wall switch to control the lights or the app on your phone. If you setup HomeKit then you can tell Siri to turn lights on and off. But I find it just as easy to use the app. You can also put buttons in the notification window on the phone so you can turn lights on and off quickly and easily. If you want voice control over the lights give Amazon Alexa a try. To me Alexa works better than Siri does right now anyway.
Q: Can these bulbs be used in ceiling fan sockets (screwed in with bulb facing down)? Thank you.
A: Yes, these bulb can be used in that manner.
Q: Is the dimmer switch wireless or does it need to be hard wired?
A: If you are referring to the on/off/dimmer switch that comes with the kit, no it is not hard wired. It is remote only. The plastic base can be screwed to the wall, the square switch has a magnetic backing and stick to the base plate, but can be removed and held like a TV remote. I leave mine on the dresser next to the bed and can turn the lights out in other parts of the house from bed.

A: No they will work fine.
